Dates Processing Line
Dates and hawthorn contain relatively high levels of pectin and fiber, which can increase juice viscosity and make filtration and clarification more difficult. To improve clarification, our date and hawthorn processing lines include enzymatic treatment to break down pectin, reduce viscosity, and make subsequent solids separation easier. The juice gets thicker during concentration, so it does not move or heat as easily. If it stays too long against the hot surface of the heat exchanger, it can overheat or scorch. To keep the juice moving and reduce this build-up, the concentration stage uses a multi-effect forced-circulation evaporator that circulates the juice quickly through the heat exchanger.
